Complex or partial processing of grapes in the production of alcohol and noble distillates.

Main stages

Primary winemaking involves the acceptance of grapes, their processing into grape juice (must), and fermentation of the must, after which wine materials are obtained..

At these stages, a number of operations are carried out: precise weighing of incoming grapes, qualitative assessment of their condition, careful removal of ridges, crushing of berries, delicate movement of pulp by pumps into pneumatic presses or vinificators, clarification of must before feeding for fermentation, and others, depending on the technology.
